Abstract

Ayam Taliwang merupakan ikon gastronomi Kota Mataram yang menghadapi tantangan besar dalam ekspansi pasar ke luar daerah, terutama terkait retensi kesegaran produk dan kompleksitas distribusi. Penelitian ini bertujuan menganalisis implementasi digitalisasi supply chain sebagai solusi atas kerentanan kualitas produk kuliner tradisional yang bersifat perishable (mudah rusak). Penelitian menggunakan pendekatan kualitatif deskriptif dengan menyoroti titik-titik kritis dalam rantai pasok konvensional, mulai dari pengelolaan bahan baku di tingkat peternak, proses produksi, penyimpanan, hingga distribusi last-mile ke luar pulau. Hasil penelitian menunjukkan bahwa penerapan teknologi berbasis Internet of Things (IoT) untuk pemantauan suhu secara real-time serta integrasi sistem manajemen inventaris digital mampu meminimalisir risiko kerusakan produk selama proses distribusi. Digitalisasi supply chain tidak hanya mendukung pengawasan pergerakan fisik barang, tetapi juga meningkatkan transparansi data dan efisiensi koordinasi antara produsen Ayam Taliwang dengan pihak logistik. Selain itu, sinkronisasi informasi dalam sistem rantai dingin (cold chain) terbukti berperan penting dalam menjaga kualitas, higienitas, dan cita rasa autentik produk hingga sampai ke tangan konsumen di luar daerah. Penelitian ini menyimpulkan bahwa transformasi digital dalam rantai pasok merupakan kebutuhan strategis bagi UMKM kuliner di Kota Mataram untuk memperluas jangkauan pasar nasional tanpa mengorbankan kualitas produk. Dengan dukungan teknologi digital, UMKM kuliner tradisional memiliki peluang lebih besar untuk meningkatkan daya saing, efisiensi distribusi, dan keberlanjutan usaha di era ekonomi digital.
