Digitalisasi Supply Chain Kuliner Khas Mataram untuk Menjaga Kesegaran Ayam Taliwang hingga ke Tangan Konsumen Luar Daerah

Ayam Taliwang merupakan ikon gastronomi khas Kota Mataram yang memiliki potensi besar untuk dipasarkan secara nasional. Namun, karakteristik produk yang mudah rusak (perishable) menyebabkan distribusi ke luar daerah menghadapi tantangan serius, terutama dalam menjaga kesegaran, kualitas rasa, dan keamanan pangan selama proses pengiriman. Penelitian ini bertujuan menganalisis implementasi digitalisasi supply chain sebagai strategi dalam menjaga kualitas Ayam Taliwang hingga sampai ke tangan konsumen luar daerah. Penelitian menggunakan pendekatan kualitatif deskriptif dengan menelaah titik-titik kritis dalam rantai pasok konvensional, mulai dari pengelolaan bahan baku di tingkat peternak, proses produksi, penyimpanan, hingga distribusi last-mile antarpulau. Hasil penelitian menunjukkan bahwa penerapan teknologi berbasis Internet of Things (IoT) melalui sensor pemantauan suhu dan kelembapan secara real-time mampu mengurangi risiko kerusakan produk selama proses distribusi. Selain itu, integrasi sistem manajemen inventaris digital membantu pelaku usaha dalam mengontrol stok, memantau umur simpan produk, dan mempercepat koordinasi antara produsen, distributor, dan penyedia jasa logistik. Digitalisasi supply chain juga meningkatkan transparansi data distribusi sehingga pelaku usaha dapat melakukan pengambilan keputusan secara lebih cepat dan akurat ketika terjadi gangguan pada rantai dingin (cold chain). Penelitian ini menyimpulkan bahwa transformasi digital pada rantai pasok kuliner tradisional menjadi kebutuhan strategis bagi UMKM kuliner di Kota Mataram untuk memperluas pasar nasional tanpa mengorbankan kualitas produk. Pemanfaatan teknologi digital tidak hanya meningkatkan efisiensi distribusi dan daya saing usaha, tetapi juga mendukung keberlanjutan bisnis kuliner lokal di era ekonomi digital.
